Ingredients:
- 1 cup grated zucchini
- 1/2 cup unsweetened cocoa powder
- 1/2 cup rolled oats
- 1/4 cup unsweetened applesauce
- 1/4 cup almond butter
- 2 tablespoons honey
- 2 tablespoons chopped walnuts
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 6 drops “Better Taste” stevia
Directions:
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a bowl, combine zucchini, cocoa powder, oats, baking powder, cinnamon, and salt.
- In another bowl, whisk together applesauce, almond butter, honey, and stevia.
- Add wet ingredients to dry ingredients and fold until just combined. Stir in walnuts.
- Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
- Let cool completely before cutting into squares and enjoying.
