Ingredients:
- 1 1/2 cups whole wheat flour
- 1/2 cup grated carrots
- 1/2 cup chopped walnuts
- 1/4 cup unsweetened applesauce
- 1/4 cup unsweetened almond milk
- 2 eggs
- 1 tablespoon coconut oil, melted
- 1 tablespoon chia seeds
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 6 drops “Better Taste” stevia
Directions:
- Preheat oven to 375°F (190°C) and line a muffin tin with 12 liners.
- In a bowl, whisk together dry ingredients (flours, spices, baking powder, salt).
- In another bowl, whisk together wet ingredients (eggs, applesauce, oil, milk, stevia).
- Fold wet ingredients into dry ingredients along with grated carrots and chopped walnuts.
- Divide batter evenly among muffin cups and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool slightly before enjoying.
