Ingredients:
- 1 1/2 cups whole wheat flour
- 1/2 cup almond flour
- 1/4 cup unsweetened applesauce
- 2 tablespoons melted coconut oil
- 1/2 cup unsweetened almond milk
- 2 eggs
- 1 tablespoon chia seeds
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 6 drops “Better Taste” stevia
- Zest of 1 lemon
Directions:
- Preheat oven to 375°F (190°C) and line a muffin tin with 12 liners.
- In a bowl, whisk together dry ingredients (flours, chea seeds, baking powder, soda, salt).
- In another bowl, whisk together wet ingredients (eggs, applesauce, oil, milk, stevia, lemon zest).
- Slowly fold wet ingredients into dry ingredients until just combined. Don’t overmix.
- Divide batter evenly among muffin cups and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool slightly before enjoying.
